Cucumbers can be cooked!

Apparently, cooking cucumbers does not take away its crunchy goodness. I stuffed it with sauteed ground pork with red bell peppers, and garlic (ala stuffed green peppers), poured some diced tomatoes and tomato juice on top, some basil, oregano and red pepper flakes, and baked it at 350 for about 45 minutes, and voila, it turned out to be a pretty good dish.

It kind of has the texture of chayote squash when cooked. Which makes sense, I guess coz I think they are somewhat related.

Bountiful Harvest

After the intense rain we had most of Tuesday, we didn’t go out to the garden to check on how the plants were doing, so we went out and checked tonight to see how things looked. The ground was still quite soaked, but I sloshed through the mud and found a lot of veggies. After looking in the garden for a little bit, Corrine determined that we needed some bags, so she went in and grabbed 2 grocery bags. One for cucumbers and another for Zucchini, definitely a good idea.

Fall Garden

I was talking to a co-worker a few days ago about her garden, and she mentioned that she and her husband had planted a fall garden. She said they planted some fall crops that would be ready to eat in about 2 months, like spinach, lettuce, etc, and how this is a great time to plant some late season crops, as it gets cooler, and they like the cool temperatures. So I thought that, that sounded like a good idea, so I planted some assorted lettuce, some spinach, a few carrots, some broccoli, a few beans, and some green onions. All these veggies come to harvest in 30-90 days, so that will put them to be harvested in September or October. It will be great harvest.
Well I haven’t updated the harvest tally lately, but it has been a big harvest, and there is quite a bit to go. There a quite a few tomatoes that are green, some are even getting yellow on their way to being red and ready to pick.
Just today, I picked a pepper, 2 zucchini & 3 Cucumbers. Yesterday we got 2 zucchini & a cucumber. The day before I didn’t pick anything, I was tired. And the day before I think we picked 2 zucchinis and 3 or 4 cucumbers. And I picked a few of each the day before along with 2 peppers, so here is my guess on the current veggie count.
