If you make them in a sort of stir-fry they are also yummy. The first time I made them with diced green peppers, yellow peppers, red peppers, onion, eggplant and mushroom. Topped with melted cheese when done...yummy. Tonight I used ground turkey, cucumber and eggplant and it was equally yummy for different reasons. You can send some extra veggies our way if you can figure out how to get them here! :) Love you!!!
