Here is a yummy recipe for a baby-friendly beef cabbage soup. I was just trying to find a use for my Kroger Frozen Vegetables, Fiesta Style (which had brocolli, chickpeas, a couple types of beans), and it turned out pretty well.
1 lb lean ground beef
1 T olive oil
1 small onion
3 cloves garlic
2 cups low-sodium beef broth (I actually used homemade stock I had lying around in the freezer)
1 15-oz can of diced tomatoes
8 oz of tomato sauce
1 cup water
Mrs. Dash garlic & herb seasoning
1 bag frozen mixed vegetables
1/2 head of cabbage, sliced into small pieces
1 cup of dry shell or macaroni pasta, cooked according to package directions
In a dutch oven or large pot, heat oil over medium heat. Sauté the onions until soft. Add garlic and cook until fragrant. Add ground beef to brown. Drain excess fat, add tomato sauce, beef stock, and water. Bring to boil, add Mrs. Dash to taste, add frozen veggies and simmer for 30 minutes. Add in the cabbage in the last 10 minutes of simmering, and stir in the cooked pasta before serving.
Pretty good, no salt!
So last week we canned 7 cans of tomato sauce. It took 22 pounds of tomatoes to make the seven pints. After that long process, the tomatoes are still growing, so we have more and more out there. With the next set of tomatoes, I think we are going to make some more tomato sauce, and I think we will also make some salsa. Here are the pictures I took of our last 2 harvests.


The picture on the left is actually a box full on tomatoes that I picked on Tuesday and the picture on the right is our harvest from Thursday. We’ll see how many tomatoes we get tomorrow, since it seems that we pick tomatoes every other day.
In case you can’t see it we are still harvesting green peppers, some eggplants and even an occasional zucchini, and maybe this week we’ll get some of that lettuce I planted about a month ago.
I know it has been like forever since I hae done a veggie update, but that is just because we have been so busy. Between work, and stuff around the house, and just enjoying life we have been quite busy. And I can apologize now for not doing the garden update, but I have bringing in just too much stuff to count. Sunday afternoon, I brought in close to 7 pounds of Roma tomatoes, not counting the little Cherry Tomatoes, and the 2 Beefeater Tomatoes(that weighed close to 1lb each), and the 3 zucchini that I brought in. Next will be lots of eggplants and time to can tomato sauce and freeze some eggplants or something.. Gardens are great stuff. I can’t wait till we start to have all this fruit with all these veggies we are growing too..
